The two-way valve works exactly as described—press the plunger down and you can feel the air escape, leaving zero room for staleness. I've had beans stay fresh for over two weeks, which is way longer than my old canister managed.
The plunger lid really does push the air out—I press it down once and the seal feels rock solid, like the coffee’s locked in a vault. My beans stay noticeably fresher into the third week, which is a first for me.
